Making Procedure

Step 1.

Marinate chicken with three tablespoons of soy sauce, vinegar, and salt for about 15 minutes. Set aside.

Step 2.

Prepare sauce: Mix corn flour and water in a bowl to make a thick corn flour solution. Set aside for about 5 minutes.

Step 3.

Mix the rest of the ingredients: sugar, ginger-garlic paste, one teaspoon of soy sauce, and salt in another bowl. Set aside.

Step 4.

Heat oil in a wok or deep frying pan over medium-high heat till almost smoking. Add chicken pieces and fry until they turn golden brown, occasionally turning while frying with a slotted spatula and spoon to prevent them from drying up. Drain fried chicken pieces and keep them aside on a plate covered with a paper towel to absorb excess oil.

Step 5.

Add garlic to the oil in the wok and fry for about 20 seconds, stirring constantly. Add cornflour solution and boil, constantly stirring until the sauce is thickened.

Step 6.

Add green peas and chicken pieces to the prepared sauce and simmer for about 3-4 minutes, occasionally stirring till the sauce is evenly coated on the chicken.

Step 7.

Stir in tomato ketchup and allow to simmer for another 2 minutes. Transfer the Manchurian mixture into a serving dish and garnish with chopped spring onion greens. Serve hot.

Tips:

You can increase or decrease the sauce’s garlic and ginger-garlic paste quantities according to your preference. You can also use dried black mushrooms instead of green peas. You can also use any noodles (apart from egg noodles) while preparing Chicken Manchurian Recipe.

Just cook the coarsely-cut noodles till they are al dente and strain them before using them. You can use sweet chili sauce instead of tomato ketchup if you want a milder flavor.
