  • 1 cup chicken salad; I used a Classic Chicken Salad recipe  from scratch
  • 2 cups crushed graham crackers
  • 10-15 chicken tenders (I like to use boneless/skinless ones) 
  • 12 miniature chocolate chip or regular granola bars (about 1- 1.5″ x 1.5″ each)
  • 8-10 chopped pecans (approx. 2/3 cup)
  • 1 cup butterscotch chips or chocolate chips (or both!)
  • 1 cup of granola (optional)

Directions

Step 1:

Preheat the oven to 300 degrees F.  Grease a 9×13-inch pan with butter or cooking spray and set aside. In the bowl of a hand mixer, cream together cream cheese and mayonnaise until well blended.

Step 2:

In a separate bowl, combine the chicken salad with 1 cup of crushed graham crackers. In another bowl, combine the remaining 1 cup of crushed graham crackers and chopped pecans.

Step 3:

In another bowl, mix chocolate chips or butterscotch chips with granola pieces. Add cream cheese to the cookie mixture, and stir until well blended.  Add the chicken salad mixture and fold in well. Spread the chicken salad batter evenly into the prepared baking pan.  

Step 4:

Spread a layer of crushed graham crackers on top of the batter and press the crumbs down lightly with your hands or a spoon for extra crunchiness. Top with butterscotch chips or chocolate chips (or both) and chopped pecans (if using).  

Step 5:

Bake for 10-15 minutes or until bubbling, being careful not to overcook. Cool on a wire rack and refrigerate for at least 2 hours to tighten the dish before cutting and serving with crackers or chips.
