  • One medium potato
  • Two stalks celery

Step 1.

Heat olive oil in a heavy stock pot over high heat and add the chicken breast halves. Brown the chicken on all sides and remove it from the heat once browned.

Step 2.

Return the chicken to the stock pot, add potato and cook until fork tender. Add onion, celery, and garlic, and cook for another minute.

Step 3.

Step 6.

Return chicken to the chili pot and add 3 cups of the puréed ingredients—season with black pepper to taste. Add more chicken broth if needed to thin out the soup.

Step 7.

Cook an additional 5 minutes before serving and garnish with slices of lemon, lime, or orange, chopped cilantro, sliced green onions, and a dash of fish sauce if desired (I used the lime).
